The Managing Director of BAG Films Network and Editor In Chief Of News24 Channel comes to Sehat Ki Rasoi to throw light on healthy cuisines and in particular healthy food of Kayasth. She talks about the influences of different invaders particularly Mughals on the food of Kayasths. Being educated and handling the accounts as ‘Munims’ or ‘recordkeepers’ they used to be a part of the royal courts and thus enjoyed the royal repast as well as take away food tips. The non vegetarian kebabs, chaaps, biryanis, ‘ dum pakht’ delicacies found their way into the food habits of the Kayasths all over India. The Kayasths Of Bihar have their own particular cuisine culture where a mix of pan India flavours influenced by the royalty and the local Bihari flavour have joined to create a variety of dishes which adorn their dining tables.

Ghughni is quintessential Eastern Indian flavour existing all over Bengal, Bihar and Orissa made from a multitude of Chick peas and dried and fresh peas. The dish is a nomenclature for a variety of fried, sautéed , steamed and gravied delicacies prepared with the Kala Chana, Dried Matar, Fresh Matar and Hara Chana. The mornings of a Bihari can begin with a slightly spiced Kala Chana Ghughni with thick gravy eaten with Pooris or Parathas, in the afternoon one can find a healthy Hara Chana Salad on the dining table, the evening snack can be a sautéed or stir fried Chana eaten with puffed rice or ‘ Choora Bhooja’ or Green Chana Pakoras and one can wrap up the night with a Matar Ghughni with Chapati or Parathas! In some parts of Bihar Chana- Chidva is also accompanied by fried fish!
