The series begins with two unique, out of box recipes of the age old , traditional Millets, the KODO and the KUTKI or Little Millet. It is also called Sama or Samvat Chaval which is used profusely during fast and called ‘Vrat Ka Chaval’. Millets are also unique due to their short growing season. They can develop from planted seeds to mature, ready to harvest plants in as little as 65 days. This is important in heavily populated areas. When properly stored, millets can be kept for two or more years. Kodo millet was domesticated in India almost 3000 years ago. It is found across the world in humid habitats of tropics and subtropics. It is a minor grain crop in India and an important crop in the Deccan plateau. Little millet was also domesticated in India. Millets are amazing in their nutrition content. Each of these millets is three to five times nutritionally superior to the widely promoted rice and wheat in terms of proteins, minerals and vitamins. Traditionally, millets were eaten as a replacement for rice or wheat, but today with the changing tastes of people, these two millets can be consumed in different fusion dishes like Pullao, Poha, Khichdee, Upma, Soup etc.
