SEHAT KI RASOI, the show is poised to complete its final twenty episodes, with yet another batch of healthy and juicy recipes, which are a burst of flavours on the tongue and extremely health worthy. The recipes would be a combination of traditional and fusion, with regions like Bengal, Bihar, Orissa and the hills that would be the center of attraction. Each region would have its unique flavours to offer. The unique ‘panch phoran’ will add that zing to the recipes of Bihar, Bengal & Orissa. There would be a variety of “Pithha’ from the ones filled with jaggery and coconut to the ones filled with spicy salty pulses. Similarly mustard seeds and paste is one ingredient that is common to all these three states, and with great innovation. Sometimes in paste form, sometimes just a sseasoning, sometimes in the gravy, the tangy mustard gives that extra flavour to dishes made of fish, green vegetables and sauces.
Hempseeds, the new superfood, has been sued since aeons by ‘Pahadis’ of India, right from Uttarakhand to the Himachal, where it is called the “Bhaang Jeera”, the seeds of the “Bhaang” plant. Without giving that ‘high’ that ‘Bhaang ‘ is so famous for, the hempseeds are packed with nutrition.
Flaxseeds another superfood, suddenly in limelight, has been used by the Bihari Kitchen since ages, in the vegetables, chutneys and crispies. Nearly every village home in ‘Mithila’ region of Bihar has one jar full of the “Teesi” or “Alsi” crunchy chips, ready to be served with “khichdee” or ” kadhi badi”.
Same goes for the wonder grain, ‘Madua’ or Ragi or Finger Millet . Several festivals in Bihar , the women break their fast with the ‘Madua’ rotis, and that is because our elders considered this millet power packed with so much sustainability in terms of strength and nutrition that it crept into the diet easily. Long fasting people get all the strength from the ‘Madua’ which is also called ‘Nachni’.

If one lady experments with a “steamed modak”, another makes a de tox drink out of fruits & vegggies, and yet another uses an “appe maker” or paniyaram to make healthy vada paos and koftes.
